For most Common App unis do you have to give specific subject rankings when applying or just overall cohort ranking? Likewise just overall GPA, or specific subject GPA?

You should avoid self-reporting your GPA or ranking unless you double checked with your counsellor. What the counsellor reports in your transcript and what’s written in the common app needs to be the same otherwise they might think you are lying.
You send them via the Collegeboard SAT website but I think there also is a part on the common app where you fill out SAT scores
